in the 17th Century, Spanish colonists in Peru discovered a cure for malaria in the bark of the Quina Quina tree. By 1825 British officers in India were administered regular doses of Quinine Syrup, which was so intense and bitter that the soldiers took to mixing it with gin & water. And so the Gin & Tonic was born. In 1858, Erasmus Bond was the first person to market and sell aerated Quinine water, marketing it quite fittingly, as a “tonic”. Before long in Victorian England, it was the soft drink of choice.
It is in this birth of tonic water and the history of the G&T that Bermondsey Tonic Water shows its provenance. Hand-crafted to a traditional Victorian recipe in the heart of Bermondsey, BTW uses naturally occurring Qunine from the bark of the Cinchona tree, as opposed to the synthetic substitute, giving it a pleasant golden hue.
The inspiration came when Nick Crispini and Lawrence Mason were compiling the gin listing for local haunt 214 Bermondsey. They found that too many gins stood up well on their own but were stripped of their individuality when mixed with commercially available tonic waters. Many people love a good G&T but think the tonic can be overly sweet yet cloyingly bitter, masking the delicate flavours of the gin. BTW offers smoother and more subtle earthy flavours, allowing the gin to shine through.
